Craft breweries seem to be sprouting up everywhere across the US. According to the Brewers Association, there are currently 2,360 American craft breweries.

What is a Craft Brewery?

There are 3 key traits that they all possess:

1. Small: Annual production of 6 million barrels of beer or less.

2. Independent: Less than 25% of the craft brewery is owned or controlled (or equivalent economic interest) by an alcoholic beverage industry member who is not themselves a craft brewer.

3. Traditional: A brewer who has either an all malt flagship or has at least 50% of its volume in either all malt beers or in beers which use adjuncts to enhance rather than lighten flavor.

Storage Requirements

One of the most important aspects of brewing craft beer is regulating temperatures when storing the finished product.

It is recommend that you store your beer in a cool area, away from direct light, sources of heat and in a constant temperature environment. Beer benefits from cool constant temperatures; usually around 50-55 degrees F. Exposure to higher temperatures risk shortening the lifespan of the beer, and lower temperatures can induce chill haze (cloudiness).

Strong beers (barleywines, tripels, dark ales) should be at room temperature (55-60F), standard ales (bitters, IPAs, dobbelbocks, lambics, stouts) should be at cellar temperature (50-55F) and lighter beers (lagers, pilsners, wheat beers) should be at a refrigerated temperature (45-50F).
